Hi Bula, you can make it without the cream of tartar (it just helps stabilize the aquafaba) or experiment with adding lemon juice We haven't tried that specifically, but if you do we'd love to hear your resultsCream of tartar just helps it firm up a little extraYou can whip aquafaba without cream of tartar, but we recommend adding the cream of tartar to help the foam stay whipped for as long as possible (a full recipe is below) Whipped aquafaba by itself will deflate pretty quickly You can rewhip it, but who wants to do that?
